Cracknel / Cracknell is a favourite at The Mains of Drum. It is delicious and easy to make—the ideal treat for a picnic, lunchbox, or even a traybake for hosting. It can be made in one bowl!

Makes 20 Slices | Preparation Time 3 minutes | Cooking Time 1 hour minutes | Total Time 1hour 3 minutes 


Ingredients

150g  Cornflakes
115g Butter
120ml Golden Syrup
75g Dried Milk Powder
40g Desiccated Coconut
25g Drinking Chocolate
50g (Or a good handfull) Sultanas

 


 

Method


  1. Melt the butter and syrup together gently in a saucepan. Do not let it boil.

  2. Combine the dry ingredients (milk powder, coconut, cocoa, and sultanas) in a large mixing bowl.

  3. Pour the melted mixture into the dry ingredients and stir well until combined.

  4. Add the cornflakes and fold through gently until everything is evenly coated.

  5. Line a tray (approx. 9x13 inch or similar) with baking parchment. Spoon in the mixture, press it down firmly and evenly.

  6. Leave to set at room temperature or in the fridge. Cut into squares once firm.

Cullen Skink Recipe

The soup originates from the town of Cullen in Moray, on the Scottish northeastern coast. Traditionally, the word "Skink" is used to describe a broth made with beef scrapings. In the 1890s, these scraps of beef became hard to come by. However, at this time, Cullen’s harbour was a thriving fishing port. So the people of the town decided to use smoked haddock in their soup.
