Hot Cross Buns

 

These delicately spiced, fruity Easter treats are a sign that spring is in the air. Enjoy this delightful British classic on a nice family picnic or mild spring evening. 

Serves 12 | Preparation Time 15 minutes | Cooking Time 3 hours 20 minutes | Total Time 3 hours 35 minutes


Ingredients

100 g Caster Sugar
1 Sachet Yeast 
40 g Light Brown Soft Sugar
A Pinch Salt
3 tsp Cinnamon
1/2 tsp Ginger 
1/4 tsp Nutmeg
250ml Full Fat / or Oat Milk
50g Raisins
500g White Bread Flour 
50g Plain flour
One Half, Zest & Juice Lemon
One Half, Zest & Juice Orange or Sweet Clementine
To Glaze Maple or Golden Syrup 

 


 

 

Method

  1. Heat milk slightly until warm. Then combine bread flour, yeast, sugar and salt in a large bowl and add the milk to form a dough. 
  2. Knead for a few minutes, then place the dough in a floured bowl. Cover and leave to rise for an hour.

 


 

  1. Once the dough has risen, combine the raisins, orange, lemon juice, zest, and spices in a bowl. Add the raisin and juice mixture, knead well, and let it rest for another hour.
  2. Then, split the dough into 12 equal pieces and roll them into small balls. Place them on a baking tray and prove for another 45 minutes.

 


 

  1. Preheat the oven to 180 °C. Make the paste by mixing plain flour with 5 tbsp of water to form a batter, and then get creative and add the crosses on top.
  2. Bake for 20 minutes; once baked, brush lightly with the syrup mixture. Finally, enjoy warm or cold.
