Large Egg x 3
Chocolate Pieces x 1 Cup
Butter x 3.5 tbsp
Heavy Cream x Half A Cup
Large Mint Leaves x 5
Separate eggs, place egg whites in a large bowl and yolks in a small bowl.
Melt chocolate pieces in a bowl and when melted, beat egg yolks and add chocolate into it.
Chop mint finely and add to the chocolate mixture.
Then whisk egg whites until they have doubled in size and then fold egg whites into the chocolate mixture.
Pour into piping bags with white star shaped nozzles and leave to chill in fridge for up to an hour.
Finally pipe into wine glasses and leave to set for half an hour and they are ready to serve.
