Caster Sugar x 100g
Yeast x 1 Sachet
Pinch of salt
Cinnamon x 3 tsp
Ginger x 1/2 tsp
Nutmeg x 1/4 tsp
Oat milk x 250ml
Raisins x 50g
White bread flour x 500g
Plain flour x 50g
Zest & juice of 1/2 a lemon
Zest & juice of 1/2 a orange or sweet clementine
Maple or golden syrup to glaze
Heat milk slightly until warm. Then combine bread flour, yeast, sugar and salt in a large bowl and add the milk to form a dough.
Knead for a few minutes, then place the dough in a floured bowl. Cover and leave to rise for an hour.
Next, combine the raisins, orange, lemon juice, zest, and spices in a bowl. Once the dough has risen, add the raisin and juice mixture knead well and let it rest for another hour.
Then, split the dough into 12 equal pieces and roll them into small balls. Place them on a baking tray and prove for another 45 minutes.
Preheat the oven to 180 °C. Make the paste by mixing plain flour with 5 tbsp of water to form a batter, and then get creative and add the crosses on top.
Bake for 20 minutes; once baked, brush lightly with the syrup mixture. Finally, enjoy warm or cold.
