Spring Roll Pastry
Mixed Peppers
Courgettes
Red Onion
Cheddar Cheese
Mozzarella
Salt
Black Pepper
Fresh Rosemary
Olive Oil
Into baking tray dice: peppers, red onion, courgettes
Add olive oil and mix
Place rosemary on top of mixture and put into pre-heated oven (180 degrees)
Leave to roast for 15 minutes and grate cheddar cheese and mozzarella
Once cooled, mix with cheddar cheese and mozzarella and roll in spring roll pastry
Raise a deep pan of oil or fryer to 180 degrees and delicately drop the spring rolls into the oil
Let the spring roll fry for 1 minute and then remove
