Mediterranean Vegetable Spring Rolls

  • Spring Roll Pastry

  • Mixed Peppers

  • Courgettes

  • Red Onion

  • Cheddar Cheese

  • Mozzarella

  • Salt

  • Black Pepper

  • Fresh Rosemary

  • Olive Oil


    • Into baking tray dice: peppers, red onion, courgettes

    • Add olive oil and mix

    • Place rosemary on top of mixture and put into pre-heated oven (180 degrees)

    • Leave to roast for 15 minutes and grate cheddar cheese and mozzarella

    • Once cooled, mix with cheddar cheese and mozzarella and roll in spring roll pastry

    • Raise a deep pan of oil or fryer to 180 degrees and delicately drop the spring rolls into the oil

    • Let the spring roll fry for 1 minute and then remove
