150g Digestive biscuits, crushed
50g unsalted butter, melted
600g cream cheese
50g caster sugar
170g Mrs Bridges Orange Curd
Rind and juice of one orange
200ml whipping cream
Whipped Cream and orange rind to decorate
Mix the crushed biscuits with the melted butter and press into the base of a lightly greased 20cm loose based cake tin. Chill.
Beat together the cream cheese, sugar, curd, orange juice and rind.
Whip the cream to a stiff hold. Fold into the cream cheese mixture.
Spoon over the base and level the top. Chill for 3-4 hours or overnight.
Before serving, decorate with the whipped cream and orange rind.
